Mexican Gastronomy and Cuisine is as intense as its people. Mexicans love where they come from and love to the bone their cultural heritage and with no doubt all Mexicans rich and poor literate or illiterate celebrate Food with a reverent, almost ritual hunger, I must say the same hunger and personality their ancestors The Aztecs did.


Mexican cuisine culture is just like when you have some chile in your mouth, you don't only taste it but you also feel it and stays in you palate tingling to remind you the spiciness and richness of its flavors.
In the culinary field almost everything about them has been said so far, we know much more about the every day life of the Mexicans than any other Spanish speaking Country in Latin America and the world.
They are certainly what they eat, as Raymond Sokolov a passionate food writer said in one of his books: "Mexico while retaining some remnants of pre-Hispanic life, is overwhelmingly Mexican, an original civilization blended together from more or less equal parts of Iberian and Indigenous roots".
The exchange of food products and cultures was the perfect blend through history giving place to the many dishes Mexicans enjoy today.
