Gastronomy in Barrancas del Cobre

Copper Canyon's gastronomy does not differ much from the recipes that are usually prepared in the City of Chihuahua, the state's capital; although, here fruits and vegetables are more frequently used, being the main ingredients meat, spicy chili and the tortillas of maize. Dinning in Copper Canyon, travelers will enjoy succulent dishes proper of the sierra of Chihuahua in the numerous inns existing in the small towns of Copper Canyon, such as the stew of meat, a sort of soup or broth prepared with chunks of rib, hoof, tail and marrow; it is accompanied with carrots, pumpkins, cabbages, maize, potatoes and aromatic herbs. If you wish something rather weighty, there is nothing like a good cut of meat seasoned in the northern style and accompanied by hot tortillas; this preparation is pretty popular in the zone. Another tasty option is the Raramuri beefsteak, a cut of meat seasoned in an especial way that is much appreciated amongst visitors. Besides, you should not forget the quesadillas, the chili of cheese and the green chili on the grill, which are served with tortillas made of maize or flour.

Another regional beverage made by the tarahumara Indians is the "tesguino", a liquor of fermented corn (tastes like beer), thick and very nutritious.
