Chiapas gastronomy
Aromas in Chiapas lead through a road of gastronomic fusions and exotic tastes. Unforgettable dishes with slight signs of pre Hispanic and Spanish cuisines, besides some peculiar ingredients, reserved only for daring travellers who wish to regale their palates with bites of iguana, turtle or armadillo; a true adventure.
Those reluctant to cross the border of traditional tastes, will be fully delighted with dishes they cannot turn down, such as the tamal chiapaneco, based on maize and seasoned with sweet, salty and spicy condiments and dressed with regional fruits; the most delicious beef or lamb barbeque; and the mouth watering cochinito (baked pork) or the peculiar chanfaina (elaborated with pig and cow innards).
Let yourself be seduced by the pictes (maize tamales), the chispola (beef with chickpeas) or the niguijuti (mole of pork), delicious dishes you cannot refuse when the time comes to eat in Tuxla Gutierrez, the state capital.
Nevertheless, the gastronomic menu is not reduced to typical dishes, but goes further and includes exquisite international dishes; you will be able to taste Italian, Japanese, Chinese, and Argentine cuisine, amongst others. There are also succulent churrasquerías (grills) and the always present fast food.
